A tasting flight on the bar. The clean glass and the funky one cost the same.

Walk into a wine bar on Orchard Street and order a glass of something you have never heard of. It comes cloudy. It smells like a barn, or a cracker, or the inside of a popcorn bag. You sip, you wait about ten seconds, and something turns at the back of your throat. You look up. Everyone is nodding. So you nod.

Here is what nobody at that bar told you. The thing you tasted has a name. It has three names and a chemical formula for each, and a wine research institute has been tracking how often it turns up in bottles for the better part of thirty years.

THE FAULTS HAVE NAMES AND CHEMICAL FORMULAS AND A RESEARCH INSTITUTE THAT TRACKS THEM

The popcorn and mouse cage note is called mousiness. It comes from three compounds, mainly 2-acetyltetrahydropyridine, produced by lactic acid bacteria. The Australian Wine Research Institute describes a mousy wine as one that "in sensitive individuals renders the wine undrinkable." The barnyard and Band-Aid note is Brettanomyces, a spoilage yeast, working through 4-ethylphenol and 4-ethylguaiacol. The vinegar edge is volatile acidity, mostly acetic acid. None of this is folklore. It is measured in micrograms per litre and it has been for decades.

ONE HUNDRED AND FOUR DRINKERS TASTED THE FAULT. FOUR PERCENT HAD HEARD ITS NAME

In an AWRI consumer study, 104 red wine drinkers tasted wines both clean and spiked with Brett compounds at a range of concentrations. The clean base wine was the most liked every time. Every spiked sample was significantly disliked against it. Even the lowest level tested moved the scores. Then, on the way out, the panel filled in an exit questionnaire, and 4 percent said they had ever heard of Brettanomyces. Read that pairing twice. The tongues worked. The vocabulary was missing. That gap is the whole story, and it is not a story about anybody being a coward.

THE METHOD RAISES THE RISK AND THE RESEARCH SAYS SO IN PLAIN LANGUAGE

The same institute is direct about the cause. Natural winemaking, with little or no sulphur dioxide added at the crusher and during ageing, raises the likelihood of Brett growth and of other microbes. Mousy taint is more likely in wines with low sulphur and low acidity. The AWRI logged a rise in mousy wines in the 1990s when red winemakers moved to lower sulphur, and another rise in the 2010s among whites made with extended lees ageing, high pH, minimal sulphur, oxidative ageing and minimal filtration. That second list is not a slur. It is the natural white winemaking method, written out.

SKIN CONTACT RAISES THE PRECURSOR LOAD AND ORANGE WINE IS WHERE THE TABLE SPLITS

Push it one step further and orange wine stops being a punchline. Extended skin contact, the thing that gives a skin-fermented white its texture and grip, also pulls more of the precursor compounds that Brett converts into those medicinal and barnyard notes. So the style that splits a table hardest is also the style carrying the heaviest precursor load. That is not a verdict on orange wine. Plenty of it is superb. It means the format leaves the least room for a sloppy cellar, which is exactly why the good ones are so good.

YOUR SALIVA DECIDES WHAT YOU TASTE AND THE LABEL DECIDES NOTHING AT ALL

Mousy compounds sit silent at the pH of wine. They only turn aromatic when your saliva raises the pH in your mouth, which is why the taste arrives retronasally, seconds after you swallow, and why you cannot smell it in the glass. Saliva pH varies between people and shifts within one person across a single day. Sensitivity runs on a spectrum, not a switch. The often repeated claim that 30 percent of people cannot detect mousiness traces back to a reference book and has never been corroborated in the scientific literature. So when you ask whether it is just you, the honest answer is that sometimes it is, and that is chemistry, not taste.

NOTHING ON THE SHELF SEPARATES THE CAREFUL BOTTLE FROM THE CARELESS ONE

Now the part that costs you 18 dollars a glass. Outside of France there is no legal definition of natural wine at all. France recognised the Vin Méthode Nature charter in March 2020, covering French wine only, with organic certification, hand harvesting, indigenous yeast and a hard ceiling on added sulphites. Everywhere else, the word on the shelf is a marketing decision. A producer farming carefully and working with almost no margin for error, and a producer who let a barrel go, sit under the same aesthetic, with the same hand-drawn label, at the same price.

TRUST THE TONGUE YOU ALREADY HAVE AND STOP PERFORMING A DELIGHT YOU NEVER FELT

So the flattening is the problem, not the category. Great natural wine is real, and it is thrilling, and the people making it are the ones this hurts most, because their craft becomes invisible next to a flawed bottle wearing the same clothes. Defending every funky bottle protects the careless producer, not the careful one.

Your tongue is not the problem. If a wine tastes like a mouse cage to you, it tastes like a mouse cage. Say it out loud at the bar. Ask what the word for it is. Somebody in that room has the word, and the second it gets said, half the table exhales.
