Flatbush wakes up on hard dough. Before the avenue fills, before the buses run heavy down Nostrand, somebody is already pulling trays. On this stretch of Brooklyn the Caribbean bakery is not a trend and it is not a discovery. It is infrastructure. It is where the block gets fed, where a few dollars still buys something hot, where three generations of an immigrant neighborhood learned the taste of home in a folded pocket of dough.
